A generation ago a men's pendant meant silver. Now it usually means stainless steel, and that shift happened for reasons rather than fashion.
Silver tarnishes. It reacts with sulphur in the air and with what your own skin produces, so a silver pendant worn daily goes dull and then dark, and it needs polishing to come back. It is also soft enough to scratch against a zip or a belt buckle.
Steel does none of that. It does not tarnish, it shrugs off sweat and chlorine, and it is hard enough that daily wear barely marks it. You can shower in it, swim in it and forget about it, which is what most people actually want.
Steel is often sold as hypoallergenic and it is much better tolerated than plated metals, but the word is doing more work than it should.
Stainless steel contains nickel as part of the alloy. It is locked into the structure rather than sitting free on the surface, which is why the overwhelming majority of people wear it without any reaction at all. If you have a genuinely severe nickel allergy, that is still worth knowing rather than being told it is impossible.
